The signal coming off a guitar pickup is low in voltage, high in impedance, and extremely sensitive to interference. Speaker cables are often stiffer and may carry a flat or figure-eight jacket profile. Speaker cables also tend to run a larger outer diameter, thanks to the heavier gauge conductors inside.
If you have a multimeter, resistance testing can confirm the construction. More practically, check the cable jacket for printing; most reputable manufacturers print the cable type right along the jacket. We'd recommend storing speaker cables and instrument cables separately, ideally with different colored jackets or labels.
